Of course it's valid. It's not my thing, but that's not what you asked :)

Pretty much anything you choose to put in a sandwich is a valid sandwich filling.

That one's also fairly standard, though.

In what way might tuna & sweetcorn be considered an invalid filling? (Each to their own and all that. I mean, it’s not like it’s the Sydney Harbour Bridge in disguise. Now *that* wouldn’t be a valid sandwich filling…)

well, this all started after i told him it was gross :)
it is a peculiarly British sandwich filling.

now, tuna & sweetcorn pizza: No, no, NO!

American Hot... Mmmm...
I often buy an extra red chilli or two to put on it, mind.

I’d probably love that, if I wasn’t veggie :-)

Sweetcorn

My company make coleslaw and sweetcorn sandwiches, which are totally vile.

It's not only a valid filling, it's mentioned in Half Man Half Biscuit's classic "Twenty Four Hour Garage People." So it's in the collective consciousness as a filling that's available at filling stations. You can't get much more validity than that.

(given that this is part of a "settle an arguement" between you and your good lady wife, I am given to smirk about the idea of exposing a New Yorker to HMHB and expecting her to have the faintest clue about it all.)
